
Coffee Brownie
Chocolate is great. Coffee is great. Put them together, and you’ve got incredibly rich, fudgy, and packed with a caffeine brownie.
Total Time: 50 minutes
Makes: 12 brownies
Ingredients:
- 220g unsalted butter
- 200g brown sugar
- 150g white sugar
- 4 eggs
- 1 tbsp vanilla extract
- 60ml Kallos espresso shots
- 65g cocoa powder
- 100g all-purpose flour
- 1 tsp salt
- 225g chocolate
Instructions:
1. Preheat your oven to 180 degrees celsius and line a 9x9 pan with parchment paper.
2. If you’re feeling extra, brown the butter by melting it over medium heat until golden flecks appear.
3. Pour the butter into a large mixing bowl, mix in both sugars, and microwave for 30 seconds at a time until the sugar melts into caramel-like goodness.
4. Whisk in one egg at a time and then add vanilla and espresso, then mix in the cocoa powder, flour, and salt until your batter is smooth and glossy.
5. Stir in half of the chopped chocolate, then pour the batter into your prepared pan and sprinkle the remaining chocolate on top.
7. Bake for 40-45 minutes or until a knife inserted comes out clean. Remove and cool.
